Ilish Polao

Gobindobhog 650g
Bay leaf 2pc
Whole garam masala 10g
Whole red chili 3pc
Green chili 3pc
Salt as per taste
Turmeric 1 tsp
Mustard Oil for frying

Take the Gobindobhog rice and wash it properly, then strain the rice and keep it aside to dry.

Marinade the Hilsa with some salt and turmeric.

Heat up the oil to fry the fish.

Fry the fish one by one and do not overcook the fish.

In the same oil add 1 tbsp ghee, the whole garam masala and dry red chilies.

Let the garam masala release its flavour.

Add the rice and fry until it is ready to be boiled.

In another pan boil water first.

For 3 cups of rice, you will need 6 cups of water.

Add the rice into the boiling water.

Add 3 slitted green chilies and salt as per your taste.

Allow the rice to boil.

If you feel that the rice needs to cook more do not add water just turn off the heat and cover the pan; the rice will be done in the steam.

Serve hot along with the fried fish pieces.
