Spinach, blanched and pureed - 1 cup
Oil - 1 tbsp
Cumin seeds - 1 tsp
Ginger, chopped - 1 tbsp
Green Chillies, chopped - 1 tbsp
Green capsicum, finely chopped - ¼ cup
Green peas, crushed - ¼ cup
French beans, finely chopped - ¼ cup
Carrots, chopped - ¼ cup
Salt - 1 tsp
Garam masala - ½ tsp
Potatoes, mashed - 1 cup
Paneer, grated - ¼ cup (Optional)
Breadcrumbs - ½ cup
Besan, roasted - 2 tbsp
Cornflour - 1 tbsp
Kasuri Methi, roasted and powdered - 1 tbsp
Roasted cumin powder - 1 tsp
Amchur powder - ¼ tsp
Coriander, chopped - ¼ cup
Cashews Nut, chopped - 10 nos
Salt - ½ tsp or as per your taste
Cashews Nut split in halves - 8-10 nos
Chaat masala - 1 tsp
Red chilli powder - ½ tsp
Cumin powder - 1 tsp

Blanch spinach for 2 minutes in hot water and then let it cool in ice water. Drain and squeeze out all the water from the spinach and then grind it to a smooth thick paste.

Chop ginger, green chillies, green capsicum, french beans, carrots and coriander.

Boil potatoes and mash them.

In a pan, heat oil and add cumin seeds. Saute for a few seconds.

Add ginger and green chillies to the pan and saute for a few seconds.

Now add chopped carrots, green beans, capsicum, and peas and saute till vegetables are almost cooked.

Add spinach paste, salt, and garam masala to the pan and saute till all moisture disappears.

In a bowl add spinach & veg mix.

Add all the ingredients from the cold mixing to the bowl and mix it till evenly mixed. Rest the mixture for 15 minutes.

Grease your palm with oil and take a spoonful of mixture and shape it into a round Tikki, place halved cashew on top and press it gently.

Deep fry these kababs on medium heat till light golden brown in colour.

Sprinkle the kababs when they are still hot with some prepared Kabab spice mix.
