Vietnamese Fresh Spring Rolls

Originating from Vietnam, fresh spring rolls, or Gỏi cuốn, are a staple of Vietnamese cuisine, often enjoyed as a light meal or appetizer. These rolls celebrate fresh ingredients and are commonly served at gatherings and celebrations. Today, they have gained international popularity, with many variations incorporating different proteins and vegetables to cater to diverse tastes.

Soak glass noodles in water until soft.
Pluck mint, basil, and coriander leaves.
Peel the surface of the carrots and shred them into small sticks or use a grater for finer shreds.
Rinse the lettuce and cut it into halves or quarters for easier wrapping.
Boil the prawn meat in water until tender.
Prepare individual bowls for each ingredient to make wrapping easier.
Chop two chilies finely and place them in a bowl.
Peel and finely chop a small piece of ginger and add it to the bowl.
Slice and dice garlic, adding it to the bowl with the chilies and ginger.
Chop coriander leaves roughly and add them to the bowl.
Roll two limes to extract more juice, then squeeze the juice into the bowl.
Add one tablespoon of fish sauce, a little plain water, and sugar to the bowl, mixing to balance the flavor for the sauce.
Use warm or hot water to soften the rice paper sheets.
Lay the softened rice paper on a flat surface or plate.
Start layering the ingredients: leaves, lettuce, carrots, cucumber, prawn meat, and glass noodles.
Carefully roll the rice paper, folding in the sides as you go until fully wrapped.
Repeat the rolling process until all ingredients are used.
