Instructions

- 4Chop onion and mince garlic finely.
- 5Heat olive oil in a large skillet over medium heat until shimmering.
- 6Sauté onion and garlic until translucent, about 3-4 minutes.
- 7Add eggplant, zucchini, and bell peppers to the skillet; cook until softened, about 5-7 minutes.
- 8Stir in chopped tomatoes, fresh herbs, salt, and pepper; mix well.
- 9Transfer the vegetable mixture to a baking dish and cover with foil.
- 10Bake in the preheated oven for 30 minutes, then remove foil and bake for an additional 15 minutes until slightly caramelized.
- 11Sprinkle with grated parmesan cheese before serving, if desired.
