Take large eggplants that are soft when pressed, about 500 grams.

Roast the eggplants on direct flame on a wire stand, turning frequently until completely soft and skin is charred.

Transfer roasted eggplants to a plate and let them cool until you can comfortably remove their skins.

Wash the eggplants in water and chop them roughly with a knife.

Heat a pan on medium heat and add 3 tbsp oil.

Add chopped onions and sauté until they turn pink, about 3-4 minutes.

Add chopped tomatoes and cook until soft, keeping the heat on medium.

Reduce heat to low and add 1 tsp salt, 1/4 tsp turmeric powder, 1/2 tsp deghi red chilli powder, 1 tsp coriander powder, and 1/2 tsp garam masala, mixing well and roasting for 1 minute.

Add the chopped roasted eggplants and mix well, covering with a lid and cooking for 10 minutes, stirring occasionally.

After 10 minutes, stir and roast the bharta until the oil separates out, keeping the heat on medium-high.

Add a packet of maggi magic masala and mix well, continuing to roast until the oil separates out, about 5 minutes.

Once the oil has separated and the curry has come together, add chopped cilantro and mix well.

Transfer the eggplant curry to a serving bowl.
