2 medium sized chopped tomatoes
½ tsp kashmiri red chilli powder
½ tsp of turmeric powder
2 tbsp of dry fenugreek leaves
coriander leaves for garnishing

Cook the aubergine over a wood fire, gas flame or in the electric oven (it will take longer in the oven, about 1 ½ hours). Save the juices that come from the aubergine for later in the dish.

Peel the aubergine skin and slice.

For Raw Aubergine Bharta: Put the chopped aubergine into a bowl and mix in the spinach, coriander leaves, tomatoes, green chillies, salt and coriander powder. You can also add lemon/lime juice. This version is ready to eat.

For Standard Aubergine Bharta: Heat the oil in a frying pan.

Add the asafoetida, ginger and green chillies. Mix together.

Continue to add tomatoes, spinach, salt, red chilli powder, turmeric powder and then roasted aubergines.

Add the smoky water from the aubergines to the mixture.

Add in dry fenugreek leaves at the end of the dish.

Serve and garnish with coriander leaves.
