1 small onion (roughly chopped)
8-10 garlic cloves
4 dry chillies (soaked)
500g potatoes (peeled)
4-5 tbsp cooking oil
1 tsp cumin seeds
1 tsp mustard seeds
2 tomatoes (roughly chopped)
1/2 tsp black pepper powder
1/2 tsp turmeric powder
salt to taste
2-3 green chillies
coriander leaves (chopped)
coriander leaves (for garnishing)

Heat cooking oil in a pan.

Add cumin seeds and mustard seeds, and let them splutter.

Add roughly chopped onion and sauté until translucent.

Add garlic cloves and sauté for a minute.

Add soaked dry chillies and sauté for another minute.

Add peeled and chopped potatoes, and mix well.

Add roughly chopped tomatoes, black pepper powder, turmeric powder, and salt. Stir to combine.

Cook until the potatoes are soft and fully cooked.

Add chopped green chillies and coriander leaves, and mix well.

Garnish with additional chopped coriander leaves before serving.
