2 cups grated potatoes
1 cup sugar
1/2 cup ghee (clarified butter)
1/2 tsp cardamom powder
1/4 cup chopped nuts (cashews, almonds)
1/4 tsp saffron strands (optional)
1/4 tsp salt

Peel and grate the potatoes, then rinse them in cold water to remove excess starch.

In a large pan, heat the ghee over medium heat until melted.

Add the grated potatoes to the pan and sauté for about 5-7 minutes until they are slightly cooked but not browned.

Stir in the sugar and mix well until it dissolves completely.

Add the cardamom powder, salt, and saffron strands (if using) to the mixture and continue to cook for another 5 minutes, stirring constantly.

Once the mixture thickens and starts to leave the sides of the pan, remove it from heat.

Grease a flat plate or tray with ghee and pour the mixture onto it, spreading it evenly with a spatula.

Sprinkle the chopped nuts on top and gently press them into the mixture.

Allow it to cool for about 30 minutes until it sets.

Once set, cut into diamond or square shapes and serve.
