3 medium size potatoes
1/2 tsp salt
1 cup water
3 tbsp mustard oil
1/2 tsp panch foron
1 tbsp onion
pinch of turmeric powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp pepper powder
1/4 tsp chaat masala
1 tbsp rice flour
chili flakes to taste

Peel the potatoes and cut them into thin slices.

Soak the potato slices in 1 cup of water for 10 minutes.

Wash the soaked potato slices well.

Heat 3 tbsp of mustard oil in a pan.

Add 1/2 tsp of panch foron and 1 tbsp of onion to the pan and sauté until golden brown.

Add the potato slices to the pan and fry for 2 minutes.

Cover the pan and cook on low flame for 5 minutes.

Add salt to taste, a pinch of turmeric powder, 1/2 tsp of coriander powder, 1/2 tsp of cumin powder, 1/4 tsp of pepper powder, and 1/4 tsp of chaat masala. Mix well.

Add 1 tbsp of rice flour and chili flakes to taste. Cook for an additional 2 minutes.

Garnish with parsley.
