500g potatoes medium size
3-4 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 large onion
1 tablespoon ginger-garlic paste
salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
½ teaspoon red chilli flakes
½ teaspoon chaat masala
¼ teaspoon garam masala
½ teaspoon amchoor powder
1 teaspoon coriander powder
2 green chillies
2 tablespoons fresh coriander

Heat oil in a non-stick kadhai over medium heat.

Add cumin seeds and mustard seeds, and let them splutter.

Add chopped onion and sauté until translucent.

Stir in ginger-garlic paste and sauté for a minute.

Add chopped potatoes and mix well with the spices.

Season with salt, turmeric powder, red chilli powder, red chilli flakes, chaat masala, garam masala, amchoor powder, and coriander powder.

Add chopped green chillies and fresh coriander, and mix everything together.

Cook for a few minutes until the potatoes are tender and crispy.
