2-3 large potatoes
2 tbsp light olive oil
1/2 tsp black mustard seeds
1/2 tsp whole cumin seeds
6-8 dried curry leaves
1 tsp dried turmeric powder
1 tsp red chili powder
salt to taste

Wash and peel the potatoes, then cut them into 1/2 inch rounds.

Heat the light olive oil in a pan.

Add the black mustard seeds and whole cumin seeds to the hot oil and let them splutter.

Add the dried curry leaves and sauté briefly.

Stir in the dried turmeric powder and red chili powder.

Add the potato rounds to the pan and mix well to coat them with the spices.

Season with salt to taste and cook until the potatoes are tender.
