Begin by preparing the ingredients: 500g Topfen, 100g Eigelb, 100g Zucker, 90g Grieß, 260g Mehl, 100g Butter, and the zest of 2 lemons.
Use a hand mixer to beat the egg yolks with the sugar until well combined.
Add the Topfen to the mixture and mix until you achieve a homogeneous mass.
In a separate bowl, combine the dry ingredients: the Grieß, Mehl, and lemon zest.
Gradually add the dry ingredients to the wet mixture, stirring until combined without lumps.
Melt the butter and mix it into the dough until you have a compact mass.
Place the dough in the freezer for about 30 minutes to firm up.
Prepare the apricots by pitting them and filling them with sugar if desired.
After 30 minutes, take the dough out of the freezer and portion it into small pieces.
Flatten each piece of dough in your hand and place an apricot in the center, wrapping the dough around it to seal tightly.
Make sure the seam is well sealed to prevent the dumplings from breaking apart during cooking.
Bring a large pot of salted water to a boil, using a wide pot for even cooking.
Drop the dumplings into the boiling water, ensuring they are not overcrowded, and cook until they float, about 5-7 minutes.
While the dumplings are cooking, prepare the breadcrumb mixture by melting butter in a skillet and adding breadcrumbs and brown sugar, cooking until golden brown.
Once the dumplings are cooked, remove them with a slotted spoon and let them drain briefly.
Roll the dumplings in the breadcrumb mixture to coat evenly before serving.
