Make farmer's cheese by heating 1 gallon of whole milk just under medium heat until foamy, about 10-15 minutes, stirring occasionally.
Once the milk reaches 190°F (88°C), turn off the heat and stir in 1/2 cup of vinegar or lemon juice.
Let the mixture sit for 15 minutes to curdle.
After 15 minutes, stir in lemon zest and strain the curds using a colander lined with damp cheesecloth.
Squeeze out excess whey and mix in 1-2 tablespoons of whey back into the cheese to make it creamier.
Refrigerate the cheese for at least 1 hour to set.
In a mixing bowl, cream together 3.5 to 4 tablespoons of butter until smooth and lighter in color.
Add 1 egg and mix well, then incorporate the farmer's cheese.
Gradually add in 1 cup of all-purpose flour, 2 tablespoons of semolina flour, and a pinch of salt to form a soft dough.
Refrigerate the dough for at least 4 hours, preferably overnight.
Bring a pot of salted water to a gentle boil.
Roll the rested dough into a cylinder and cut it into 8 equal pieces.
Prepare small apricots by removing the stones and replacing them with sugar cubes.
Flatten each piece of dough into a disc, place an apricot in the center, and wrap the dough around it, sealing well.
Drop the dumplings into the simmering water and gently stir to prevent sticking.
Cook the dumplings for 15 to 20 minutes until they float to the surface.
Prepare a bread crumb topping while the dumplings cook.
