Start by adding 250 grams of topfen (quark) into the kitchen machine.

Add 50 grams of wheat flour, 1 packet of vanilla sugar, 1 teaspoon of vanilla extract, a pinch of salt, and 10 grams of honey to the topfen.

Mix on medium speed until the mixture starts to pull away from the sides of the bowl, about 2 minutes.

Transfer the dough to a floured surface and knead it lightly to prevent sticking.

Place the dough back into a bowl and refrigerate for about 10 minutes.

For the butter breadcrumbs, melt 70 grams of butter in a pan until liquid.

Add 70 grams of granulated sugar and 1 packet of vanilla sugar to the melted butter and mix well.

Stir in 100 grams of grated and roasted hazelnuts and 100 grams of bread crumbs until well combined.

Cut the apricots in half and remove the pits.
