Sprinkle flour on the counter and place the dough onto it, adding more flour if the dough is sticky.
Test the dough's consistency by forming a small dumpling and placing it in simmering water; adjust with more flour if it falls apart.
Divide the dough into 8 equal pieces, flatten each piece, and place an apricot in the center, sealing the dough around it.
Roll the dumpling lightly between palms, flouring hands if necessary.
Place the dumplings into the simmering water using a slotted spoon and cook for 10 to 12 minutes.
Melt butter in a medium-sized pan, add sugar and cinnamon, and blend until combined.
Add breadcrumbs to the pan and roast on low heat until golden brown.
Check if dumplings are done by poking an apricot; if soft, they are ready.
Remove dumplings with a slotted spoon and allow them to drain.
Roll the dumplings in the breadcrumb mixture and sprinkle with powdered sugar before serving.
