Boil 500 grams of potatoes until tender.
Drain and let cool before peeling.

Gradually mix in 150 grams of flour until combined, using a spatula and then kneading with hands.
Prepare a bowl of water to wet hands for shaping the dumplings.
Take a portion of the dough, flatten it in your hand, and place a pitted apricot in the center.
Wrap the dough around the apricot, sealing it tightly.
Bring a large pot of lightly salted water to a boil and gently drop the dumplings in.
Cook the dumplings until they float, about 10 to 15 minutes, depending on size.
In a skillet, melt 120 grams of butter and add 180 grams of breadcrumbs, cooking until golden brown.
Add 3 tablespoons of sugar to the breadcrumbs and mix well.
Once the dumplings are cooked, remove them with a slotted spoon and roll them in the breadcrumb mixture until coated.
