1

Cut goat meat into chunks and rinse under lime juice.

2

In a bowl, combine goat meat with salt, black pepper, all-purpose seasoning, jerk powder, paprika, thyme, garlic, ginger, scallion, Scotch bonnet pepper, and browning sauce; mix well to coat the meat.

3

Let the meat marinate for at least 1 hour or overnight for better flavor.

4

Heat over 1 tablespoon vegetable oil in a large pot over medium heat.

5

Add marinated goat meat to the pot and fry for 3 minutes without stirring.

6

After 3 minutes, stir and fry for another 3 minutes until browned.

7

Remove some of the potatoes and tomatoes from the mixture to add later.

8

Add water from the kettle to cover the meat, then mix in remaining seasoning and salt to taste.

9

Cover the pot and cook for 1.5 to 2 hours, checking occasionally and adding more water as needed to ensure the meat is tender.

10

After about 1.5 hours, check the tenderness of the meat; if not tender, continue cooking for an additional 30 minutes.

11

Once tender, add remaining carrot, tomato, Irish potato, scallion, and 1 tablespoon ketchup to the pot.

12

Add a bit more all-purpose seasoning if desired, cover, and cook until everything is heated through.
