Preheat the oven to 220°C (fan 200°C / gas 7).
Put the sliced fennel and sliced potatoes into a large roasting tin and season lightly.
Squeeze over 2-3 lemon wedges and tuck the quarters in with the potatoes and fennel.
Roast for 30 minutes until the veggies are beginning to soften and brown.
Pour the stock over the potatoes and fennel and arrange the salmon on top.
Season and bake for another 20-25 minutes until the salmon is cooked through.
Scatter with fennel fronds and serve hot with lemon wedges.
