Lamb Kofta with Yogurt Sauce

In modern times, kofta has gained popularity worldwide, often adapted to local tastes and ingredients, making it a versatile dish enjoyed in many forms.

Start by making a simple syrup with 1 cup of water and 1 cup of sugar over medium to high heat until dissolved.
Add crystallized ginger, cinnamon sticks, and cloves to the syrup and let steep.
Prepare the yogurt sauce by mixing Greek yogurt with fresh dill, parsley, mint, cilantro, lemon juice, lemon zest, salt, and pepper. Cover and set aside.
In a bowl, combine 2 pounds of ground lamb with diced onion, minced garlic, fresh dill, parsley, mint, cilantro, cumin, cinnamon, coriander, smoked paprika, salt, and black pepper.
Mix the ingredients with clean hands until well combined without overmixing.
Soak skewers in water for at least a couple of hours to prevent burning.
Form the lamb mixture onto the soaked skewers into cylindrical shapes.
Grill the koftas until cooked through, ensuring they are not too thick for even cooking.
