Lamb Kofta with Yogurt Sauce

Place all of the ingredients into a bowl: ground lamb, brown onion, crushed garlic, ground cumin, ground coriander, chili flakes, finely grated lemon rind, mint leaves, and salt.
Mix the ingredients together well with your hands.
Divide the mixture into eight portions and shape each into a sausage shape.
Cover and pop it into the fridge for about 15 minutes to firm up.
While the koftas are chilling, make the raita by mixing Greek yogurt, shredded mint leaves, lemon juice, and garlic.
Heat some olive oil in a frying pan.
Cook the koftas for about 12 minutes until they're well browned on all sides.
Serve warm with the raita.
