In a mixing bowl, add 500 grams of lamb mince.

Add 1/2 finely chopped brown onion, 3 cloves of finely chopped garlic, 1 teaspoon of finely chopped parsley, 1 teaspoon of cumin, 1 teaspoon of paprika, a good amount of salt, and ground black pepper.

Mix all the ingredients together thoroughly.

Divide the mixture into four portions and shape each portion onto a skewer.

If using wooden skewers, soak them for about 20 minutes to prevent burning.

Transfer the shaped koftas onto a cake rack and refrigerate for a couple of hours to firm up.

Prepare the grill by spreading charcoal evenly on one side and placing the cooking grates on top.
