Ayamase (Ofada Stew)

Cultural Context

Originating from the Yoruba people of Nigeria, Ayamase, also known as Ofada stew, is a vibrant, spicy dish traditionally served with Ofada rice. This stew is celebrated for its rich flavors and distinctive green color, derived from the use of green bell and scotch bonnet peppers. In modern times, Ayamase has gained popularity beyond Nigeria, with many variations emerging worldwide, showcasing the dish's adaptability and appeal.

Servings4
5 large green bell peppers
1 large red onion (divided)
3 Scotch Bonnet peppers
1 cup boiled Goat meat (chopped)
1 cup boiled Shaki (chopped)
1 cup boiled Ponmon (chopped)
4 boiled eggs (optional)
6 Tablespoons locust beans (Iru) (divided)
1 1/2 cups palm oil
3 cubes Maggi
Salt to taste
1

In a blender, combine the peppers, half locust beans and half onion. Blend until almost smooth.

2

Pour the blended pepper mix into a strainer and let excess water drain out.

3

Set a large pot with a tight fitting lid on medium heat, add in the palm oil. Bleach the oil for 5-10 minutes until it changes to a lighter color.

4

Add in the chopped onion and leftover locust beans. Fry until the onion is a bit golden.

5

Add in the parboiled meat and fry until lightly browned, stirring often to prevent sticking.

6

Add in the pepper mix, eggs, salt, and Maggi. Stir to combine.

7

Decrease the heat to low-medium, and cook the sauce until oil floats to the top (45 minutes to 1 hour depending on your stove).

8

Remove and discard the excess oil before serving.
