1

Peel and dice 3 large potatoes into fairly small chunks.

2

Divide the potatoes into two and place in separate pots with water.

3

Chop half of the onion into a dice and the other half into slices.

4

Tear the kale leaves from the stem and loosely slice them.

5

In a saucepan, add the diced potatoes, chopped onion, and kale.

6

Season with salt and add 2-3 bay leaves tied together for easy removal.

7

Add a touch of black pepper, bring the water to a boil, and let it simmer for about 15 minutes until the potatoes are done.

8

Once the potatoes come apart easily, switch off the heat and drain everything, removing the bay leaves.

9

Place the drained mixture back in the pot to steam dry for a few minutes.

10

Use a masher to mash everything together until it's fairly rough and rustic.

11

Add a few pieces of cold butter to the mash and mix it together, tasting for seasoning.

Serve the stamppot topped with sliced smoked sausage.
