Fill a large pot with water and add salt, then bring to a boil.
Add the potato chunks and kale to the boiling water.

While the potatoes are cooking, heat the smoked sausage according to the package instructions, usually for 15 minutes in hot water.
Drain the potatoes and kale once cooked.
Add milk and butter to the drained potatoes and kale, then mash everything until smooth.
Stir in mustard, salt, and pepper to taste.
In a separate pan, fry the diced bacon cubes until crispy.
Mix the crispy bacon into the mashed potatoes for extra flavor.
Serve the mash with the smoked sausage on the side, and add a dash of gravy if desired.
