Peel the potatoes and cut them into quarters.
Boil the potatoes in a large pot of salted water for about 20 minutes.
In a skillet, sauté diced bacon until crisp, then remove the bacon but keep the rendered fat.
In the same pan, add the escarole and cook until wilted.
Check the potatoes; they should be soft enough to puree. Drain the water and start mashing the potatoes.
Add the cooked escarole and bacon to the mashed potatoes and stir everything together until well combined.
Cut the smoked sausage into slices and stir them into the pot.
Season the stamp pot with salt and pepper, adjusting to taste as needed.
Serve the stamp pot on plates, ensuring each serving has a good mix of potatoes, escarole, bacon, and sausage.
