Sweet Chili Sauce

8 cups diced tomatoes
1/2 cup white sugar
1/2 cup finely chopped onions
3/4 cup finely chopped celery
1/3 cup chopped bell peppers
1 1/8 teaspoons kosher salt
3/4 teaspoon cinnamon
3/4 teaspoon ginger
1/2 teaspoon mustard seed

Chop up 8 cups of tomatoes.

Put the diced tomatoes into a large pot.

Add 1/2 cup of white sugar to the pot.

Add 1/2 cup of finely chopped onions to the pot.

Add 3/4 cup of finely chopped celery to the pot.

Add 1/3 cup of chopped bell peppers (any color) to the pot.

Add 1 1/8 teaspoons of kosher salt to the pot.

Add 3/4 teaspoon of cinnamon to the pot.

Add 3/4 teaspoon of ginger to the pot.

Add 1/2 teaspoon of mustard seed to the pot.

Stir the mixture really well.

Put the pot on the stove and bring it to a boil.

Turn down the heat and let it simmer for about two hours, stirring frequently to prevent scorching.

Once cooked down and thickened, pour the sauce into a measuring cup.

Use the measuring cup to pour the sauce into jars for canning.

Wipe down the rims of the jars and put on the lids and seals.

Place the jars in hot boiling water in your canner and boil for about 15 minutes.

Remove the jars from the canner, wipe them down, and tighten the lids.
