Lasagna Roll Ups

Preheat the oven to 350 degrees Fahrenheit.

Boil water in a large pot (Dutch oven or regular pot).

Cook lasagna noodles according to package instructions (about 8 minutes).

Add a little olive oil to the boiling water to prevent noodles from sticking.

Dice half a cup of onion.

Mince three cloves of garlic.

Line a baking sheet with parchment paper and spray with olive oil.

Lay out cooked lasagna noodles on the baking sheet, ensuring they don't touch each other.

Spray the noodles with another light coat of olive oil.

Saute diced onions in a pan with a little olive oil until translucent.

Add minced garlic to the pan and cook for about 1-2 minutes until fragrant.

Take a lasagna noodle, add cheese mixture down the middle, a bit of sauce, and a sprinkle of mozzarella cheese.

Roll the noodle tightly, leaving some space at the end to prevent filling from spilling out, and place it seam-side down in the baking dish.

Repeat the process with remaining noodles until all are filled and rolled.

Top the assembled roll-ups with a layer of marinara sauce, smoothing it out over the top.
