1 small onion, diced
5 cloves garlic, minced

1/2 teaspoon smoked paprika
24 ounce jar marinara sauce
1/2 cup water
1 cup beef stock
1/2 teaspoon freshly ground black pepper
16 ounces lasagna noodles
1.5 cups shredded mozzarella cheese
15 ounces ricotta cheese
1/4 cup shredded parmesan cheese
1 large egg
1/4 cup fresh Italian parsley

In a large pot over medium heat, add 1 tablespoon of olive oil.

Add 1 pound of lean ground beef and break it up. Saute until browned and fully cooked.

Once the beef is browned, add 1 small diced onion and saute for a couple of minutes until translucent.

Add 5 cloves of minced garlic, 1 teaspoon of salt, 1/2 teaspoon of oregano, and 1/2 teaspoon of smoked paprika. Toss for about 1 minute until fragrant.

Pour in a 24 ounce jar of marinara sauce, adding 1/2 cup of water to the jar to get all the sauce out. Stir to combine.

Add 1 cup of beef stock and 1/2 teaspoon of freshly ground black pepper. Stir and bring to a simmer.

Once simmering, reduce heat to medium low and continue simmering for about 30 minutes.

Fill a large pot with cold water and bring to a boil. Add 2 tablespoons of salt and 16 ounces of lasagna noodles. Cook according to package directions until al dente.

Drain the noodles and transfer them to a bowl. Soak in cold water to stop the cooking process and prevent sticking.

In a mixing bowl, combine 1.5 cups of shredded mozzarella cheese, 15 ounces of ricotta cheese, 1/4 cup of shredded parmesan cheese, 1 large egg, and 1/4 cup of fresh Italian parsley. Mix until evenly incorporated.

Preheat the oven to 375 degrees.

In a 9x13 baking dish, add about 1/2 cup of the meat sauce to prevent sticking.

On a large baking sheet, line up 6 lasagna noodles. Add 1 ice cream scoop of the cheese mixture to each noodle and spread it out with a spatula.

Spread about 1 to 1.5 tablespoons of meat sauce over the cheese mixture on each noodle, then roll each noodle up.

Transfer the rolled noodles to the baking dish.

Add the remaining meat sauce on top of the lasagna roll-ups and sprinkle with 1.5 cups of shredded mozzarella cheese.

Cover the baking dish loosely with aluminum foil to prevent sticking.

Bake at 375 degrees for 45 minutes.

After 45 minutes, remove the foil, change the oven temperature to broil, and broil for about 3 minutes until the cheese is lightly browned.

Garnish with fresh Italian parsley before serving.
