Lasagna Roll Ups

9 lasagna noodles
2 cloves garlic, minced
1/4 cup nutritional yeast
1 cup firm tofu, crumbled
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried basil
2 cups lentil bolognese sauce
1 cup tomato sauce
2 cups non-dairy cheese, shredded

Boil lasagna noodles in water until cooked, then drain the water.

Prepare tofu ricotta sauce by blending garlic, nutritional yeast, tofu, lemon juice, salt, pepper, and basil until smooth.

Lay out cooked lasagna noodles on a baking sheet.

Spread a layer of lentil bolognese sauce over the noodles.

Spread a layer of tofu ricotta sauce on top of the bolognese.

Roll the noodles from the bottom up to form roll-ups.

Place the roll-ups in a casserole dish with some tomato sauce at the bottom.

Spread more tomato sauce on top of the roll-ups.

Sprinkle non-dairy cheese on top of the sauce.

Cover the casserole dish with foil and bake at 375°F for 30-35 minutes, until bubbling and cheese is melted.
