Lasagna Roll Ups

15 to 20 uncooked lasagna sheets
1 pound ground beef (80% lean)
1 can (29 oz) tomato sauce
1/2 onion, diced
2 teaspoons minced garlic
2 teaspoons black pepper
1 egg
15 oz ricotta cheese
1 and 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
zucchini, thinly sliced
1 cup shredded mozzarella cheese for topping

Lay out 15 to 20 uncooked lasagna sheets in a baking dish, alternating each sheet on the diagonal.

Pour boiling water over the lasagna noodles and let them sit for 30 minutes to soften.

Using a mandolin, thinly slice zucchini into paper-thin rounds.

Grate Parmesan cheese and chop a large bunch of fresh parsley.

Dice half an onion into small pieces.

Add the diced onion to a sauté pan followed by 1 pound of ground beef.

Cook the onion and beef over medium heat, breaking the meat into small pieces until the onion is soft and the meat is brown.

Add 2 teaspoons of minced garlic and stir to combine.

Pour in a 29 oz can of tomato sauce and stir to incorporate with the beef and onions, allowing the sauce to simmer for a few minutes.

In a medium-sized bowl, add 15 oz of ricotta cheese, 1 and 1/2 cups of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 1/4 cup of chopped parsley, 1 teaspoon of black pepper, and 1 egg. Stir until fully combined.

Spread about 1/2 cup of the sauce over the bottom of a 9 by 3 inch baking dish.

Carefully take the lasagna sheets out of the water and lay them out on a tray in an even layer.

Place three zucchini slices onto each sheet of lasagna.

Spoon a couple tablespoons of the ricotta cheese filling onto each lasagna sheet and gently spread it in an even layer, leaving one end free of filling.

Carefully roll up the lasagna with the zucchini and ricotta cheese inside, placing the rolled end on the bottom in the sauce-covered baking dish.

Continue assembling and rolling the remaining lasagna rolls, placing them in the sauce-covered baking dish.

Spoon the remaining meat sauce all over the lasagna roll-ups, covering them completely.

Cover the baking dish with tin foil and bake at 375°F for 30 minutes.

Remove the lasagna rolls from the oven and take off the tin foil.

Sprinkle 1 cup of shredded mozzarella cheese all over the top.

Return the lasagna rolls to the oven for another 10 minutes until the cheese is melted.
