Lasagna Roll Ups

1 cup diced yellow or white onion
2 tablespoons minced garlic
2 pounds lean ground beef
32 ounces marinara sauce (2 jars)
1/2 teaspoon ground black pepper
1/2 teaspoon crushed red pepper
1 to 2 teaspoons salt
1 teaspoon Italian seasoning
2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 cups ricotta cheese
1 1/2 cups shredded mozzarella cheese
3/4 cup grated parmesan cheese
1 large egg
1 cup chopped spinach

Heat a pot over medium to medium-high heat and add a little olive oil.

Add 1 cup of diced onion and 2 tablespoons of minced garlic to the pot and cook for about 3 minutes until the onions are soft and the garlic is golden brown.

Add 2 pounds of ground beef to the pot, breaking it into small pieces, and cook until browned.

Stir in 32 ounces of marinara sauce (2 jars) and mix well.

Season the sauce with 1/2 teaspoon of ground black pepper, 1/2 teaspoon of crushed red pepper, 1 to 2 teaspoons of salt, 1 teaspoon of Italian seasoning, 2 teaspoons of garlic powder, and 2 teaspoons of onion powder. Mix thoroughly.

Cover the pot and let the sauce simmer for about 5 minutes, stirring occasionally.

In a separate bowl, combine 1 1/2 cups of ricotta cheese, 1 1/2 cups of shredded mozzarella cheese, and 3/4 cup of grated parmesan cheese. Mix well until combined.

Lightly whisk 1 large egg and add it to the cheese mixture along with 1 cup of chopped spinach. Mix until creamy and well combined.

Spread the filling into each of the 6 cooked lasagna noodles, rolling them tightly and tucking in the sides as needed.

Spray a baking dish with cooking spray and add some meat sauce to the bottom.

Place the lasagna rolls in the baking dish and top with more meat sauce, ensuring each roll is well covered.

Generously sprinkle shredded mozzarella cheese on top of the rolls and sauce.

Bake in the oven at 350 degrees for 40 to 45 minutes until the cheese is golden brown.

Let the lasagna cool for about 15 minutes before cutting into it.
