Portuguese Cataplana

Originating from the Algarve region of Portugal, Cataplana is a traditional seafood dish cooked in a unique clam-shaped copper pot. Slice bell peppers thinly
Thinly slice one large onion
Cut up two tomatoes
Chop fresh cilantro
Cut cod into 1.5 inch pieces and clean shrimp, leaving heads and tails on
Season shrimp and cod with salt, pepper, paprika, and Portuguese seasoning; mix with olive oil and cover
Turn on Zojirushi electric skillet and add olive oil
Add sliced onions with a dash of salt and sauté for about 3 minutes
Add minced garlic and tomatoes with salt; cook until tomatoes soften
Add bell peppers, salt, pepper, paprika, and Portuguese seasoning; cover and cook for about 5 minutes
Place potato slices on top, seasoning with salt, pepper, paprika, and Portuguese seasoning; add lime juice
Add sausage and a splash of olive oil, then pour in a cup of Vino Verde; cover and cook for 5 minutes
Taste the broth and adjust flavor if needed
Add cod and two cups of chicken stock; cook for a few minutes
Add shrimp last, adjusting timing based on shrimp size
Taste the broth one last time before adding cilantro
Ladle seafood, sausage, vegetables, and broth into a bowl and serve with hearty bread and Portuguese white wine
