250 gm cauliflower
4 tbsp curd
½ tsp salt
1 tbsp coriander powder
1 tsp red chilli powder
½ tsp roasted cumin powder
½ tsp garam masala
2 tbsp chopped coriander leaves
¼ tsp turmeric powder
1 tsp oil
1 tbsp gram flour or besan
2 tbsp Oil
1 big cardamom
½ small cineman stick
3 cloves
2 cardamom
1 green chilli
½ inch ginger
12 to 15 cashews
4 medium sized diced tomato
¼ cup water
3 tbsp Oil
1 tsp ghee
1 tbsp oil
¼ tsp asafoetida or hing
2 tbsp chopped coriander leaves
¼ cup water
Salt to taste
¼ tsp turmeric powder
1 tsp coriander powder
1 tsp red chilli powder
¾ cup water
1 tsp sugar
½ tsp garam masala
1 tbsp kasoori methi or dry fenugreek leaves

Cut cauliflower into florets.

In a bowl, combine curd, coriander powder, red chilli powder, roasted cumin powder, garam masala, chopped coriander leaves, turmeric powder, oil, and gram flour to create a marinade.

Add cauliflower to the marinade and coat evenly. Let it marinate for a while.

Heat oil in a large pan over medium heat and add cardamom, cinnamon stick, cloves, and green chilli. Sauté for a minute.

Add ginger and cashews, and sauté until fragrant.

Stir in diced tomatoes and cook until soft.

Add marinated cauliflower and mix well. Pour in water and cook until the cauliflower is tender.

Add ghee, asafoetida, and additional spices. Stir well and simmer for a few minutes.
