Carom Seeds (Ajwain) - 1/4 Tsp
Oil - 4 Tbsp

Cumin Seeds - 1 Tsp

Tomatoes - 2 Medium
Onion - 1 Small
Ginger Garlic Paste - 1 Tsp
Kashmiri Chilli Powder - 1 Tsp
Coriander Powder - 2 Tsp
Sugar - 1/2 Tbsp
Cashew Cream (8 Cashews + 1/2 Cup Milk)
Garam Masala - 1/2 Tsp

Cut cauliflower into florets and soak in water.

In a bowl, combine curd, turmeric powder, red chilli powder, garam masala, kasuri methi, carom seeds, oil, and salt to create a marinade.

Add cauliflower florets to the marinade and coat evenly. Let it marinate for at least 30 minutes.

Heat oil in a large pan over medium heat and sauté onion petals until golden.

Stir in cumin seeds and fennel seeds, then add chopped tomatoes and cook until soft.

Add ginger garlic paste, kashmiri chilli powder, coriander powder, and salt. Cook for a few minutes until fragrant.

Pour in water and let the gravy simmer for 10 minutes.

Add marinated cauliflower to the gravy and cook until tender, about 10-15 minutes.

Stir in cashew cream and sugar, and simmer for an additional 5 minutes.
