Gather ingredients: onion, carrots, celery, lamb, potatoes, and thyme.
Start boiling water in a pot to prepare for the stew.
Add a dollop of sunflower oil to the pot for browning the meat.
Brown the lamb in the oil, ensuring it gets a nice color.
Chop the vegetables: peel and chop the carrots (keeping the skin for nutrients), chop the celery (removing the bitter ends), and chop the onion (removing both ends).
Add the chopped vegetables to the pot with the browned lamb.
Add enough water to submerge the vegetables and lamb in the pot.
Add the Oxo Cube soup mix to enhance flavor and thicken the stew.
Let the stew boil for a while, stirring occasionally, until the onions start to fall apart and the stew thickens.
Taste the stew to check for seasoning and adjust if necessary.
