Meethi Puri

2 Cup Wheat Flour
Refined Oil for Frying
Left over Sugar Syrup from Sweets Particularly from Gulab Jamun
½ Cup of Clarified Butter

Put 2 Tbsp of Clarified Butter in Wheat Flour and mix nicely.

Crumble the mixture and knead the dough by adding Left over Sugar Syrup little by little, ensuring not to add it all at once.

Knead to form a tight dough.

Once the dough is kneaded, grease it with clarified butter.

Cover the dough and set aside for 10-15 minutes while heating the oil.

Put Refined Oil in a heated pan.

After 10-15 minutes, knead the dough again.

Take some dough and make small lemon-sized round balls.

Take one ball, apply some clarified butter on it, and roll it out to make a puri approximately 3 inches in diameter.

Once the oil is hot, deep fry the rolled puri, pressing it with a ladle to make it fluffy and crispy.

Turn the puri once it is golden brown on one side.

Continue to deep fry until golden brown and crispy on all sides, turning frequently.

Once fried, place it on one side of the wok to remove excess oil.

Transfer the puri to a plate and repeat with the remaining dough.
