In a wide bowl, add 2 cups of whole wheat flour, 1/4 tsp salt, and a pinch of turmeric powder.

Mix all these ingredients together.

Add water at room temperature a little at a time to knead the dough until smooth.

Add 2 tbsp of oil and gently knead the dough until all the oil is absorbed.

Apply 1 tsp of oil around the dough and spread it all over.

Let the dough rest for about 1 hour.

For the puran, soak 1/2 cup of chana dal in water for about 2 hours.

In a pressure cooker, add the soaked chana dal with enough water, close the cooker, and cook for about 5-6 whistles on medium-low flame.

Once the pressure is released, open the cooker and mash the dal using a ladle or masher.

In a pan, add the mashed dal and 1/2 cup of powdered jaggery (1:1 ratio).

Mix well and cook on medium flame for about 10-15 minutes until the mixture thickens.

Add cardamom powder and 1 tbsp of ghee to the mixture and mix well.

Once the excess moisture evaporates and the mixture is thick, transfer it to a bowl and let it cool completely.

Once cooled, take small portions of the puran mixture and shape them into small round balls.

After 1 hour, divide the rested dough into small equal-sized balls.

To roll out the puran poli, place a piece of butter paper on a rolling stone and grease it with a little ghee.

Grease another piece of butter paper as well.

Take a dough ball, gently press it in the middle to form a small cup shape.

Place a puran ball in the center and close the dough from all sides, sealing it well.

Place the ball on the greased butter paper and cover it with another piece of butter paper.

Gently press it with your palm to flatten it.

Remove the top butter paper and roll out the puran poli gently, using a chapati roller if needed.

Heat a tawa and spread a little ghee on it.

Place the puran poli on the hot tawa and cook for about 10 seconds before flipping it.

Keep flipping the puran poli at intervals of 10-15 seconds.

Once you see brown spots, add a little ghee on top of the puran poli.
