Wash the chana dal at least 2-3 times and soak it in warm water for at least 1 hour.

Add the soaked chana dal to a pressure cooker with 1 cup of water and a pinch of salt.

Cover the cooker and cook under pressure for 4 whistles or until soft to touch.

Wait for the pressure to subside before opening the cooker and drain the cooked chana dal.

Mash the hot chana dal until smooth and lump-free.

In a tawa, add the mashed chana dal and equal amount of grated jaggery, along with ginger powder, grated nutmeg, and cardamom powder.

Cook the mixture on low flame for 8-9 minutes, stirring constantly until it thickens and starts sticking to the bottom.

Remove from heat and let the mixture cool to room temperature.

In a mixing bowl, add refined flour and a pinch of salt, then knead with water and oil to make a soft dough.

Knead the dough for 12-15 minutes until smooth and pliable, adding more oil as needed.

Allow the dough to rest for 12-15 minutes.
