1/3 of entire garlic knob, (horizontally sliced cross-section)
4 sprigs of rosemary
1 bunch of thyme
1 stick of butter

Preheat your oven to 350°F.

In a bowl, mix together salt, black pepper, smoked paprika, and chilies to create a spicy rub.

Generously salt the lamb rack.

Heat olive oil in a pan over low-medium heat and sear the lamb until lightly browned.

Add garlic, rosemary, and thyme to the pan and sear for another 2 minutes.

Insert a probe into the center of the lamb and set the target temperature to 137°F for medium rare.

Place the pan with the lamb rack into the oven.

After about 8 minutes, remove the pan and baste the lamb with melted butter.

In the last 5 minutes of cooking, spread harissa over the lamb and coat it with the spice rub.

When done, remove the lamb from the oven, baste again with melted butter, and let it rest before slicing.
