Light coconut milk reduces calories while still providing creaminess.

Sweet potatoes offer a similar texture and flavor profile.
Wash the pigtail and soak it overnight.
Boil the pigtail three to four times, changing the water each time to remove salt.
Chop fresh herbs (cilantro, parsley, thyme) and set aside.
Chop onion, garlic, and sweet peppers (one mild and one hot) roughly and set aside.
In a pot, add regular butter and golden ray cooking margarine.
Add allspice berries and chummer to the pot and sauté to infuse flavors into the pigtail.
Add the chopped herbs to the pot and mix well.
Cover the pot and let it steam and infuse for a while.
Cut the breadfruit into block sizes (about 2.5 to 3 inches).
Add the breadfruit to the pot.
If desired, add chummer for color and veggie base for flavor.
Add a can of coconut milk and mix with some water (about a can and a half total).
Place a twig of thyme in the middle of the pot.
After 15 minutes on medium-low heat, open the pot and turn the breadfruit gently.
After another 10 minutes, leave some liquid in the pot to avoid a pudding-like consistency.
Garnish with red sweet peppers and finely chopped cilantro before serving.
