Gather a six quart pot, corn kernels, oil, and salt (if desired).

Add 3 tablespoons of extra virgin olive oil to the pot and swirl to coat the bottom.

Turn the flame to medium heat.

Drop in 2 test kernels to check if the oil is hot enough.

Wait for the test kernels to pop, which will take 90 seconds to 3 minutes depending on various factors.

Once the test kernels pop, turn off the heat and remove them from the pot.

Cover the pot and let the remaining kernels sit in the warm oil for about 30 seconds.

Turn the heat back on to medium and cook the kernels with the lid slightly off to allow steam to escape.

Wait for the popping to start and leave the pot alone until the popping slows to 1-2 seconds between pops.

Do not shake the pot while the corn is popping to avoid condensation dripping onto the popcorn.
