Olive oil is healthier due to its monounsaturated fats.

Peel and slice garlic cloves in half, removing the germ to reduce bitterness.

Add garlic and salt to a food processor and blend until finely minced, scraping the bowl every 15-30 seconds for about 2 minutes.

Add a teaspoon of lemon juice and process for another minute, scraping the bowl again.

Slowly drizzle in half a cup of vegetable oil while the processor is running to emulsify, taking about 2-3 minutes.

After the first half cup, let the processor run for 30 seconds uninterrupted.

Add a tablespoon of lemon juice slowly, then repeat the process of adding half a cup of oil followed by a tablespoon of lemon juice until all ingredients are incorporated, which should take about 12 minutes.

Once finished, transfer the garlic sauce to a container, smoothing the surface and covering it with a paper towel to wick away moisture.
