Squeeze the juice from the lemon into a pouring jug, ensuring no seeds get in.

Prepare 3 cups of sunflower oil.

Add the garlic cloves to a food processor and blend on low speed until minced.

Scrape down the sides of the bowl with a spatula to remove stuck garlic pieces.

Add the sea salt flakes to the minced garlic and blend on high until it forms a paste.

Slowly pour in 1 teaspoon of lemon juice while the processor is on high to help emulsify.

Slowly add in ½ cup of sunflower oil while blending to create a homogeneous mixture.

Repeat adding lemon juice and oil slowly until both are fully incorporated and the mixture is emulsified.

Turn off the machine and check the consistency of the paste.
