Separate the cloves from 3 bulbs of garlic by smushing the head upside down and using your thumbs to separate them.

Peel the garlic cloves by pouring boiling water over them and letting them soak for one minute to loosen the skins.

Remove the germ from the garlic cloves for a milder flavor, cutting it out with a paring knife if necessary.

Place the peeled garlic cloves into a food processor.

Add 2 teaspoons of kosher salt to the food processor with the garlic and blend until it forms a paste.

Add 1/4 cup of lemon juice to the garlic paste and blend.

Slowly drizzle in 1 cup of sunflower oil while blending continuously to create an emulsion, adding it in increments of 1/2 cup at a time.
