Prepare 4 slices of ginger and mince 4 cloves of garlic.

Cut celery into 2-inch sections.

Slice beef across the direction of the muscle fiber.

Marinate the beef with soy sauce, dark soy sauce, oyster sauce, a little bit of sugar, some water, white pepper powder, corn starch, and a little bit of baking soda.

Mix everything together and add sesame oil and regular cooking oil after the marinade is mixed with the beef.

Let the beef marinate for about 10 minutes.

Add oil to a hot pan over medium-high heat.

When the oil is hot, add a tiny bit of sugar and salt, then immediately add the celery to the pan.

Stir fry the celery for about 1-2 minutes, then add a touch of rice wine and stir fry a little more to let the alcohol evaporate.

Remove the celery from the pan.

Add more oil to the pan if needed, then add ginger and garlic to the oil briefly.

Spread the beef out in the pan and let it pan fry until the bottom is slightly brown, about 1 minute.

Add minced garlic to the beef and continue to stir fry until the beef is about 80% done.

Add a touch of rice wine (optional) and toss the beef to let the alcohol evaporate.

Season the beef with more soy sauce, dark soy sauce, and oyster sauce, then mix evenly.

Add a little bit of water to the pan; the water will boil quickly and thicken into a sauce due to the corn starch.

Once the sauce thickens, add the celery back to the pan and a touch of ground black pepper.
