Veg Momos, originating from Tibet, have become a beloved snack in India, especially in the Himalayan regions. Traditionally filled with meat, the vegetarian version celebrates local vegetables and spices, making it accessible to a wider audience. Today, momos are a popular street food across India, enjoyed by people of all ages, often served with spicy sauces that enhance their flavor.

Prepare dough by mixing all-purpose flour and water until smooth; knead for 5-7 minutes.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Finely chop cabbage, carrots, peas, onions, ginger, and garlic.
Heat sesame oil in a pan over medium heat; sauté onions, ginger, and garlic until fragrant, about 2-3 minutes.
Add chopped vegetables to the pan; stir-fry for 5-7 minutes until tender.
Season the mixture with soy sauce, salt, black pepper, and coriander leaves; mix well and remove from heat.
Divide the rested dough into small balls; roll each ball into a thin circle.
Place a spoonful of the vegetable filling in the center of each circle.
Fold the dough over the filling to create a half-moon shape; pinch the edges to seal.
Prepare a steamer and line it with parchment paper; arrange momos in the steamer without touching.
Steam the momos for 10-12 minutes until the dough is cooked through and slightly translucent.
Serve hot with dipping sauce or chutney.
