1/4 cup chickpeas
2 pieces garlic
1/2 red onion
1 stick green onion
1/4 cup diced carrots
1/2 cup chopped broccolini
2 large caramino mushrooms
1/4 cup corn
1.5 cups overnight rice
2 tablespoons soy sauce
couple tablespoons chili oil

Use a fork to crush about a quarter cup of chickpeas.

Roughly chop two pieces of garlic.

Dice half a red onion.

Chop one stick of green onion.

Dice about a quarter cup of carrots.

Chop about half a cup of broccolini.

Chop two large caramino mushrooms.

Heat a non-stick pan over medium heat and add a couple tablespoons of chili oil.

Add red onion, green onion, and garlic to the pan and sauté for about a minute.

Add carrots, broccolini, and mushrooms to the pan and sauté for about a minute.

Add a quarter cup of corn to the pan.

Add one and a half cups of overnight rice and two tablespoons of soy sauce to the pan.
