Vegetable Fried Rice

Finely mince 2 cloves of garlic.

Chop 1 green onion into small pieces, separating the stem and leafy parts.

Cut celery into bite-sized pieces.

Cut broccoli into bite-sized pieces.

Cut cauliflower into bite-sized pieces.

Cut mushrooms into bite-sized pieces.

Add mushrooms for Umami flavor.

Add bean sprouts for crunch.

Add purple cabbage strips for texture and color.

Beat 2 eggs in a bowl.

Use freshly made or leftover rice.

Heat oil in a hot pan over medium-high heat.

Add a little salt and a tiny bit of sugar to the oil.

Add celery, broccoli, cauliflower, and mushroom to the pan and stir fry for about 50 seconds to 1 minute.

Add bean sprouts and stir fry for another 20 seconds.

Add a touch of rice wine and stir fry until it boils off, which takes a few seconds.

Remove the vegetables from the pan.

Add more oil to the pan and stir fry the eggs.

Stir fry eggs on one side and sauté garlic and green onion stem on the other side.

Mix eggs and garlic/green onion once eggs are more than 50% cooked and stir fry until eggs are completely cooked.

Add rice to the pan and stir fry for about 1 minute to warm it up, breaking up any rice crumbs.

Season rice with salt and stir fry briefly to mix.

Add a touch of dark soy sauce and stir fry until the rice color looks even, about 1 to 2 minutes.

Push rice to one side and add purple cabbage strips to the clear part of the pan and warm it up.

Add previously stir-fried vegetables back to the pan along with a touch of black pepper powder.

Toss everything together and add the chopped leafy part of the green onion.

Give everything a few quick tosses to mix and finish.
