Vegetable Fried Rice

2 cups cooked rice, refrigerated or frozen
3 tbsp canola oil
2 eggs
1/3 cup onion finely chopped
2 cloves garlic minced
1/2 cup carrot small diced
1 stalk celery
1 cup Broccoli florets
1/3 cup kernel corn
1/3 cup green peas
1/2 cup bell pepper yellow, red or green
2 tsp Chinese cooking wine
3 tbsp scallion chopped
3 tbsp parsley chopped
1-1/2 tbsp soy sauce light or dark
1 tbsp oyster sauce or mushroom sauce for vegan

Prepare all ingredients and have them within arm's reach from the stove.

Heat canola oil in a pan over medium heat.

Add minced garlic and chopped onion, sauté until fragrant.

Add small diced carrots, celery, and broccoli florets, and stir-fry until tender.

Add the cooked rice, breaking up any clumps, and mix well with the vegetables.

Push the rice to one side of the pan, crack the eggs on the other side, and scramble them.

Combine the scrambled eggs with the rice and vegetables.

Add the corn, green peas, and bell pepper, and stir to combine.

Pour in the Chinese cooking wine, soy sauce, oyster sauce (or mushroom sauce), and sesame oil, mixing everything together.

Garnish with chopped scallions and parsley before serving.
