Vegetable Fried Rice

1 cup carrots
1 cup cauliflower
1 cup onion
1 cup green beans
1 cup broccoli
1 cup green peas
1 cup bell peppers
1 cup okra
1 cup celery
1 tablespoon ginger
1 tablespoon garlic
5 cups cooked basmati rice
3 tablespoons corn oil
1 dried chili
1 tablespoon salt
black pepper powder to taste
1 cup cashews
green onions to taste
1 tablespoon chopped cilantro
1 tablespoon sesame seeds
sesame oil to taste

Prepare about a cup each of the following vegetables: carrots, cauliflower, onion, green beans, broccoli, green peas, bell peppers, okra, and celery.

Add about a tablespoon each of ginger and garlic to the vegetable mix.

Use 5 cups of cooked basmati rice that has been refrigerated overnight.

Heat a wok on high heat and add about 3 tablespoons of corn oil.

Add one dried chili and optional Szechuan peppercorns to the hot oil.

Add 1 cup of onion, 1 tablespoon of garlic, and 1 tablespoon of ginger to the wok.

Season with a little salt and black pepper powder.

Add the hardest vegetables first: celery, green beans, carrots, and cauliflower. Stir-fry for 3 to 4 minutes on high heat, keeping it moving.

Add the remaining vegetables: broccoli, green peas, bell peppers, and okra. Stir-fry for another 3 to 4 minutes.

Add a handful of cashews (about 1 cup) to the mix.

Add the cold cooked basmati rice to the wok and fry it, aiming for some browning or blackening on the rice for flavor. Fry for about 5 minutes, stirring continuously.

Turn off the heat and add chopped green onions, chopped cilantro, sesame seeds, and sesame oil to the fried rice.
